Caballo Dorado

Courtesy of Keep it Crafted and their constantly creative pursuit of a delicious cocktail:  "Preparation is key to making a great drink on demand. Bartenders might look like they come up with everything on the spot, but that’s only possible with the right ingredients on hand. Often that requires hours, if not days, to create those ingredients. Luckily when @funkmogul joined this week’s collaborative meeting with @gozatequila and @atthemeadow, we had already prepared fresh yellow melon juice and had great syrups and bitters on hand. With those, Robin was able to put together an incredible variation on the Caballo Blanco in a single try—with the melon’s coloring, Caballo Dorado seemed a natural fit. It’s a gorgeous drink, and it tastes even better!"

|  2oz Goza Blanco Tequila
|  1oz Yellow Melon Juice
|  3/4oz Spicy Ginger Syrup
|  1/2oz Lime Juice
|  2 dashes Firewater Bitters, by Scrappy's Bitters

|  Shake above ingredients with a small amount of ice
|  Double-strain over a stack of draft ice in a chilled Collins glass
|  Top off with club soda and float bitters over the surface with a bar spoon
|  Garnish with an already-zested lime wedge
