Ras el Hanout Rose Chicken Legs
Ras el Hanout is a North African spice blend that already contains rose petal, so pairing it with Rose Cordial just amps up the floral notes. Coat the chicken with the paste, chill it a few hours, then roast on a wire rack for crisp skin.

Ingredients
- 1½ to 2 lbs chicken legs
- ¼ cup Ras el Hanout spice blend
- 2 tbsp Rose Cordial
- Lime wedges and fresh cilantro, to serve
Instructions
- Whisk the Ras el Hanout and Rose Cordial together into a thick paste.
- Coat the chicken legs and let them chill, covered, in the fridge for a few hours.
- Preheat the oven to 400°F. Place the chicken on a greased wire rack set over a sheet pan.
- Bake for 25 minutes, then flip and bake for another 20 minutes, until the chicken is cooked through and crisp.
- Rest for 5 to 10 minutes so the juices redistribute. Serve with lime wedges and cilantro.
