Spicy Ginger Basil Shrimp Skewers: A Quick Patio Dinner

Ingredients
- ¼ cup Spicy Ginger Syrup
- Zest of 1 small lime
- Juice of ½ lime
- 1 clove garlic, minced
- ½ tbsp fresh basil, chopped
- ¼ tsp salt
- ¼ tsp red pepper flakes
- 8 raw, deveined, tail-on shrimp
- Vegetables of choice, cut into skewerable pieces
- Olive oil, for the pan
Instructions
- Whisk the Spicy Ginger Syrup, lime zest, lime juice, garlic, basil, salt, and red pepper flakes in a bowl.
- Pour half of the sauce over the shrimp along with a drizzle of olive oil. Toss to coat and let sit while you prep the vegetables.
- Thread the shrimp and vegetables onto skewers.
- Heat a greased grill pan (or grill) over medium-high. Cook the skewers for about 4 minutes, spooning on more sauce, until the shrimp start to turn pink.
- Flip, lower to medium heat, brush on more sauce, and cook 2 to 3 more minutes until the shrimp are opaque throughout. Serve over greens or rice.
