Spicy Ginger Basil Shrimp Skewers: A Quick Patio Dinner

Ingredients

  • ¼ cup Spicy Ginger Syrup
  • Zest of 1 small lime
  • Juice of ½ lime
  • 1 clove garlic, minced
  • ½ tbsp fresh basil, chopped
  • ¼ tsp salt
  • ¼ tsp red pepper flakes
  • 8 raw, deveined, tail-on shrimp
  • Vegetables of choice, cut into skewerable pieces
  • Olive oil, for the pan

Instructions

  1. Whisk the Spicy Ginger Syrup, lime zest, lime juice, garlic, basil, salt, and red pepper flakes in a bowl.
  2. Pour half of the sauce over the shrimp along with a drizzle of olive oil. Toss to coat and let sit while you prep the vegetables.
  3. Thread the shrimp and vegetables onto skewers.
  4. Heat a greased grill pan (or grill) over medium-high. Cook the skewers for about 4 minutes, spooning on more sauce, until the shrimp start to turn pink.
  5. Flip, lower to medium heat, brush on more sauce, and cook 2 to 3 more minutes until the shrimp are opaque throughout. Serve over greens or rice.
