Spicy Ginger Basil Shrimp Skewers:
Happy first day of spring folks! We’re celebrating with some tasty grilled goodness. 🍤🌶

Combine all ingredients in a bowl and whisk together. Pour half the sauce and a little drizzle of olive oil on shrimp and toss to combine. While the shrimp sit for a couple minutes, chop your favorite veggies into bite size, skewerable (we’re making that a word) chunks. Once everything is chopped, begin adding the veggies and shrimp to your skewers. You can cook these on a grill, but in my case I used a grill pan. Heat a greased grill pan over med-med/high heat. Once the pan is hot, add the skewers and let cook for about 4 min, or until you see that the shrimp is turning pink. Before flipping, spoon a bit more of the sauce onto the skewers. Once flipped, turn down to medium heat, spoon on a bit more of the sauce, and let cook for another 2-3 minutes or until shrimp are pink. You can serve these as an appetizer or over some greens or rice. This recipe is for one serving but can easily be doubled or tripled to enjoy with friends!
