Vanilla Spice Spelt Cinnamon Rolls

This recipe has got it all! These cinnamon rolls are made with sprouted spelt flour giving these rolls a nice chew and a heartier, earthy taste.

2.75 c sprouted spelt flour
3 tsp baking powder
3 tbsp sugar
1 c oat milk
2 tsp apple cider vinegar
2 tsp vanilla extract
6 tbsp coconut oil, melted
1/4 c sugar
2 tsp cinnamon
2 tsp @portlandsyrups Vanilla Spice Rooibos Syrup
1/4 c softened non-dairy butter

1/4 c @portlandsyrups Vanilla Spice Rooibos Syrup
1 c powdered sugar


 Set oven to 400F and grease an 8x8 baking dish. In a small bowl, whisk together oat milk and apple cider vinegar and let sit for 10 minutes. Then add in the vanilla extract and coconut oil and whisk again. In a large bowl, whisk together flour, baking powder, and sugar. Pour the wet mixture into the dry and combine together with a spatula. Form dough into a sphere and roll out on a floured surface until you have a rectangle about 1 in thick. Mix together your filling ingredients then spread evenly over the rectangle of rolled out dough. Roll the dough tightly into a log then slice into 8 even rounds. Add the rolls to your baking pan and bake for 15 mins. Once removed from the oven make your icing and pour it over the warm rolls and serve!
