Caballo Dorado Cocktail

Ingredients
- 2 oz blanco tequila
- 1 oz fresh yellow melon juice
- ¾ oz Spicy Ginger Syrup
- ½ oz fresh lime juice
- 2 dashes Scrappy’s Firewater Bitters
- Club soda, to top
- 1 lime wedge, for garnish
Instructions
- Combine the tequila, melon juice, Spicy Ginger Syrup, lime juice, and bitters in a shaker with a small amount of ice.
- Shake briefly, then double-strain into a chilled Collins glass filled with crushed ice.
- Top with club soda and stir gently.
- Float a few extra dashes of bitters over the surface with a bar spoon and garnish with a zested lime wedge.
