High Desert Gin & Tonic
Lavender and Gin are a match made in botanical heaven. This drink highlights the "purple" notes of the syrup without letting it become "soapy" and the sage garnish amps up the herbal notes.
Ingredients:

2 oz Dry Gin (look for one with citrus notes)

¾ oz Portland Syrups Lavender

½ oz Fresh Lime Juice

Top with Sparkling Water

Sage for garnish
Instructions:
Shake the gin, syrup, and lime with ice. Strain into a glass filled with fresh ice. Top with sparkling water. "Spank" the sage sprig to wake up the aromatics and use as a garnish.
