Oregon Gold Rush
Our take on the classic Gold Rush. Meyer Lemon Syrup does double duty as the acid and the sugar; a little extra fresh lemon keeps it bright; aromatic bitters bring the spice and balance.

Ingredients
- 2 oz bourbon (or a Pacific Northwest rye)
- 1 oz Meyer Lemon Syrup
- ½ oz fresh lemon juice
- 2 dashes aromatic bitters
- Sprig of thyme, for garnish
Instructions
- Combine all the ingredients (except the thyme) in a shaker filled with ice.
- Shake until chilled, about 20 seconds.
- Fine-strain into a chilled coupe glass or over a large ice cube in a rocks glass.
- Garnish with a sprig of thyme and serve.
