Oregon Gold Rush

Our take on the classic Gold Rush. Meyer Lemon Syrup does double duty as the acid and the sugar; a little extra fresh lemon keeps it bright; aromatic bitters bring the spice and balance.

Ingredients

  • 2 oz bourbon (or a Pacific Northwest rye)
  • 1 oz Meyer Lemon Syrup
  • ½ oz fresh lemon juice
  • 2 dashes aromatic bitters
  • Sprig of thyme, for garnish

Instructions

  1. Combine all the ingredients (except the thyme) in a shaker filled with ice.
  2. Shake until chilled, about 20 seconds.
  3. Fine-strain into a chilled coupe glass or over a large ice cube in a rocks glass.
  4. Garnish with a sprig of thyme and serve.
