Root Beer Banana Bread

A brown-sugary banana bread with a soft, cinnamon-scented sarsaparilla note from Root Beer Syrup — both in the batter and drizzled on top. The banana rounds pressed into the loaf caramelize as it bakes.

Ingredients

  • 3½ bananas, mashed
  • ½ cup sugar
  • ⅓ cup melted butter
  • 2 tsp Genuine Root Beer Syrup
  • 1 egg
  • ½ tsp ground cinnamon
  • 1 tsp baking soda
  • ⅛ tsp salt
  • 1½ cups all-purpose flour
  • For the topping:
  • 1 banana, sliced into rounds
  • ¼ tsp ground cinnamon
  • 1 tbsp Genuine Root Beer Syrup

Instructions

  1. Preheat the oven to 350°F. Mix the topping ingredients in a small bowl and set aside.
  2. In a large bowl, mash the bananas with a fork. Stir in the sugar, butter, and 2 tsp Root Beer Syrup.
  3. Stir in the egg, then the cinnamon, baking soda, salt, and flour until combined and no dry flour remains.
  4. Pour into a greased, parchment-lined metal loaf pan. Press the seasoned banana slices from the topping into the top of the batter.
  5. Bake for 45 minutes, or until a toothpick comes out clean.
  6. Once out of the oven, drizzle with any leftover cinnamon-root-beer topping mixture. Slice and serve.
