Root Beer Silver Dollar Pancakes

Small buttermilk pancakes with a splash of Root Beer Syrup in the batter and more drizzled on top. They freeze well between sheets of parchment — stash them for weekday mornings and reheat in a toaster oven.

  • Cook time: 10 minutes
  • Yield: 4 to 5 servings

Ingredients

  • 1 cup gluten-free 1-to-1 baking flour (or all-purpose)
  • 1 tsp baking powder
  • ¼ tsp salt

  • 1 cup buttermilk
  • 1 egg
  • 1 tbsp coconut oil, melted
  • ¼ cup Genuine Root Beer Syrup, plus more for serving

Instructions

  1. Whisk the wet ingredients (buttermilk, egg, coconut oil, and Root Beer Syrup) together in a bowl.
  2. Whisk in the dry ingredients (flour, baking powder, salt, and cinnamon) until you have a thick but pourable batter with no lumps.
  3. Heat a nonstick pan over medium-low and lightly grease. Scoop ⅛-cup portions into the pan.
  4. Cook until bubbles form and the edges lift cleanly, about 2 minutes. Flip and cook another minute until golden.
