Root Beer Silver Dollar Pancakes
Small buttermilk pancakes with a splash of Root Beer Syrup in the batter and more drizzled on top. They freeze well between sheets of parchment — stash them for weekday mornings and reheat in a toaster oven.

Ingredients
- 1 cup gluten-free 1-to-1 baking flour (or all-purpose)
- 1 tsp baking powder
- ¼ tsp salt
- ⅛ tsp ground cinnamon
- 1 cup buttermilk
- 1 egg
- 1 tbsp coconut oil, melted
- ¼ cup Genuine Root Beer Syrup, plus more for serving
Instructions
- Whisk the wet ingredients (buttermilk, egg, coconut oil, and Root Beer Syrup) together in a bowl.
- Whisk in the dry ingredients (flour, baking powder, salt, and cinnamon) until you have a thick but pourable batter with no lumps.
- Heat a nonstick pan over medium-low and lightly grease. Scoop ⅛-cup portions into the pan.
- Cook until bubbles form and the edges lift cleanly, about 2 minutes. Flip and cook another minute until golden.
- Serve with an extra drizzle of Root Beer Syrup.
