Sweet Spicy Chicken Ramen

A weeknight-friendly ramen bowl with chicken thighs in a mango-habanero-soy glaze and diced fresh mango stirred through at the end. Twenty-five minutes start to finish if you let the chicken marinate while you prep everything else.

Ingredients

  • 1 package fresh ramen noodles
  • 3 boneless, skinless chicken thighs, cut into bite-sized pieces
  • ½ cup Mango Habanero Syrup
  • ⅛ cup soy sauce
  • 2 drops fish sauce
  • ¼ tsp ground ginger
  • 1 tbsp fresh orange juice
  • 1 tbsp sriracha
  • 1 tsp cornstarch
  • ½ mango, diced
  • Fresh cilantro, to garnish

Instructions

  1. Whisk the Mango Habanero Syrup, soy sauce, fish sauce, ginger, orange juice, and sriracha together. Pour half over the chicken and let marinate for 30 minutes.
  2. Bring the remaining sauce to a light boil in a small saucepan. Ladle out 1 tbsp, whisk it with the cornstarch, then stir the slurry back in. Bring back to a boil, then remove from heat.
  3. Drain the chicken from its marinade and cook in a single layer in a hot greased pan over medium-high heat, flipping once, until cooked through.
  4. Cook the ramen noodles per package directions.
  5. Combine the noodles, chicken, and mango in a large bowl. Pour the thickened sauce over the top, toss to coat, and finish with cilantro.
