Sweet Spicy Chicken Ramen
A weeknight-friendly ramen bowl with chicken thighs in a mango-habanero-soy glaze and diced fresh mango stirred through at the end. Twenty-five minutes start to finish if you let the chicken marinate while you prep everything else.

Ingredients
- 1 package fresh ramen noodles
- 3 boneless, skinless chicken thighs, cut into bite-sized pieces
- ½ cup Mango Habanero Syrup
- ⅛ cup soy sauce
- 2 drops fish sauce
- ¼ tsp ground ginger
- 1 tbsp fresh orange juice
- 1 tbsp sriracha
- 1 tsp cornstarch
- ½ mango, diced
- Fresh cilantro, to garnish
Instructions
- Whisk the Mango Habanero Syrup, soy sauce, fish sauce, ginger, orange juice, and sriracha together. Pour half over the chicken and let marinate for 30 minutes.
- Bring the remaining sauce to a light boil in a small saucepan. Ladle out 1 tbsp, whisk it with the cornstarch, then stir the slurry back in. Bring back to a boil, then remove from heat.
- Drain the chicken from its marinade and cook in a single layer in a hot greased pan over medium-high heat, flipping once, until cooked through.
- Cook the ramen noodles per package directions.
- Combine the noodles, chicken, and mango in a large bowl. Pour the thickened sauce over the top, toss to coat, and finish with cilantro.
