Authentic Ginger's bolder cousin. We start with the same mountain of organic Peruvian ginger root, then layer in Japanese, Habanero, and Serrano chilies for a syrup with real warmth and depth. The result is a Moscow Mule with noticeable kick, a Whiskey Ginger with backbone, and a homemade ginger ale that's a little more interesting.

Stir an ounce into vodka and lime, top with sparkling water, and you've made a mule with real character. Splash it into bourbon for a Spicy Ginger Whiskey that turns up the volume on a classic. Add it to mezcal for cocktails with smoke and warmth. For non-drinkers, mix 1 oz with 6 oz sparkling water and a squeeze of lime — a craft ginger soda with a satisfying kick.

Tasting Notes: bright Peruvian ginger, layered chili heat (Japanese, Habanero, Serrano), peppery warmth, lingering finish

The Short Version: A bolder ginger syrup made with whole organic Peruvian ginger root and a layered chili blend — for Moscow Mules and ginger drinks with real warmth and depth.

Ingredients: Filtered water, organic ginger juice, organic cane sugar, habanero peppers, serrano peppers, Japanese chilies, organic ginger concentrate, citric acid.

Perfect For: Spicy cocktail enthusiasts, Moscow Mule loyalists who want more heat, mezcal drinkers, ginger fanatics, and anyone who finds Authentic Ginger a little too tame.

Best Enjoyed In: Spicy Moscow Mules (1 oz syrup + 1.5 oz vodka + lime + sparkling water), Spicy Whiskey Gingers, mezcal sours, hot ginger sodas (1 oz + 6 oz sparkling water + lime), or stirred into hot tea with honey for a ginger-and-honey cold remedy.

The Portland Syrups Promise: Ethically sourced, carefully brewed, and bottled in glass jars right here in SE Portland, Oregon.

Frequently Asked Questions

Q: How long does the syrup last after opening?
A: Our syrups are shelf-stable for 24 months unopened. Once opened, refrigerate and enjoy within 6 months.

Q: What's the difference between Spicy Ginger and Authentic Ginger?
A: Same brewing process, same Peruvian ginger base — different heat. Authentic Ginger uses Japanese chilies for a moderate, ginger-beer-style warmth. Spicy Ginger turns the dial up with Japanese, Habanero, and Serrano chilies for a layered, slow-building warmth that lingers. If you want a Moscow Mule with kick, choose Authentic. If you want a Moscow Mule with more backbone, choose Spicy.

Q: How spicy is Spicy Ginger?
A: It has a real kick — noticeably warmer than commercial ginger beer or our Authentic Ginger — but it's not hot-sauce intense. Most people read it as "comfortably spicy, like a good ginger beer with extra warmth that lingers." The ginger flavor still leads, with the heat building in the finish. If you enjoy spicy margaritas or a strong ginger ale, you'll be at home. If you prefer almost no heat, our Authentic Ginger is the lighter end of the ginger spectrum.

Shake first or the rest is extra spicy!

The syrup is fantastic, but I made two drinks without giving it a shake. Now it's muy picante!

Spicy Ginger, Authentic Ginger + more!

I have tried many Portland Syrups and there's still many to try. I find the 2 Gingers, either separate or a little of each, in seltzer/bubby water very refreshing and is my go-to beverage. It also helps settle the stomach. I use most of the syrups with carbonated water and crushed ice. For the unsweetened tea, I use flat water with meyer lemon and simple sugar for a nice Iced Tea. The cherry-pomegranate is also very good with bubbly water. The Portland Syrups I've tried have not disappointed and I like them best with carbonated water but flat does the trick too!
I get the 6-pack, every other month and change out flavors as needed (or as the seasons change). Highly recommend!!!

Delicious, but....

I love this stuff but can only drink a tiny amount because the sugar content is too high.

One of my faves!

This syrup is one of my absolute favorites. It’s versatile with many different spirits. I use a recipe of the site for the spicy whiskey ginger (I use a 100 proof whiskey). It’s one of my top 3 cocktails….. period! Awesome job team!

I love this flavor

All the flavors I have tried are good. But I love the Spicy Ginger, my husband does too.
It goes well as a splash in Bourbon.
It also spices up a mocktail.

Spicy!

I have tried several things to help me break the habit of an evening cocktail (or three). For me, nothing seems to replace the bite of booze as well as ginger. So glad to have found Portland Syrups Spicy Ginger. I mix an ounce or so with 12oz of grapefruit flavored seltzer and it’s fantastic. Lime flavored seltzer is nice as well. I also like that it ends up being quite a bit lower calorie/less sweet than the typical ginger beer. When I’m not abstaining, this syrup also makes for a splendid Moscow Mule.

Love the spicy ginger syrup

I like the kick in the spicy ginger syrup. I alternate between ginger and spicy ginger syrup for my ginger brew drink. I always have a bottle of ginger brew in my refrigerator!

Ideal

I tried the plain ginger syrup first wanting a ginger beer, since the root beer/cola was so good. I was disappointed cause it wasn’t what I wanted. -This- is what I wanted for something like bottled ginger beers. Not actually spicy, like the mango habanero syrup. It just gives the ginger beer bite. In my top 5 flavors.

The best ginger syrup, period!

I’ve tried several ginger syrups and I’ve tried making my own but by far the best I’ve found is the Spicy Ginger Syrup. It has a strength of ginger flavor and the spicy part is the “after glow” from its spice ingredients. It is my most ordered syrup and the one that I have shared the most with others.
