Pumpkin Spice Pancakes (or Waffles)
One batter, two options — pour it into a hot skillet for pancakes or a preheated iron for waffles. Pumpkin Spice Syrup carries the fall flavor, and cinnamon and nutmeg reinforce it.

Ingredients
- 1½ cups all-purpose flour
- 1 tbsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 cup milk (or dairy-free alternative)
- 1 egg
- 2 tbsp melted butter or neutral oil
- 2 tbsp Pumpkin Spice Syrup
- Maple syrup and extra Pumpkin Spice Syrup, to serve
Instructions
- Whisk the flour, baking powder, salt, cinnamon, and nutmeg in a large bowl.
- In a separate bowl, whisk the milk, egg, melted butter, and Pumpkin Spice Syrup.
- Pour the wet ingredients into the dry and stir until just combined — a few lumps are fine.
- Heat a lightly greased nonstick skillet over medium heat or preheat a waffle iron.
- For pancakes: pour ¼-cup portions and cook until bubbles form and the edges set, about 2 minutes. Flip and cook another minute until golden. For waffles: cook per your iron's directions until golden brown.
- Serve warm with maple syrup and a drizzle of Pumpkin Spice Syrup.
