Pumpkin Spice Pancakes (or Waffles)

One batter, two options — pour it into a hot skillet for pancakes or a preheated iron for waffles. Pumpkin Spice Syrup carries the fall flavor, and cinnamon and nutmeg reinforce it.

Ingredients

  • 1½ cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 cup milk (or dairy-free alternative)
  • 1 egg
  • 2 tbsp melted butter or neutral oil
  • 2 tbsp Pumpkin Spice Syrup
  • Maple syrup and extra Pumpkin Spice Syrup, to serve

Instructions

  1. Whisk the flour, baking powder, salt, cinnamon, and nutmeg in a large bowl.
  2. In a separate bowl, whisk the milk, egg, melted butter, and Pumpkin Spice Syrup.
  3. Pour the wet ingredients into the dry and stir until just combined — a few lumps are fine.
  4. Heat a lightly greased nonstick skillet over medium heat or preheat a waffle iron.
  5. For pancakes: pour ¼-cup portions and cook until bubbles form and the edges set, about 2 minutes. Flip and cook another minute until golden. For waffles: cook per your iron's directions until golden brown.
  6. Serve warm with maple syrup and a drizzle of Pumpkin Spice Syrup.
