This is a bright, playful cocktail pairs botanical gin with Raspberry Rhubarb syrup, letting the juicy, earthy flavors shine. Dry shaking gives the drink a frothy, creamy texture that feels extra indulgent. Just make sure to add the soda slowly.

Ingredients

  • 2 oz dry Gin
  • 1 oz Raspberry Rhubarb Syrup
  • ¾ oz Fresh Lemon Juice
  • 1 Egg White (or 1 oz Aquafaba for a vegan foam)
  • Soda water to top

Instructions

  1. Add gin, syrup, lemon, and egg white to a shaker without ice.
  2. Shake hard for 20 seconds (the "dry shake").
  3. Add ice and shake again until cold.
  4. Strain into a tall glass and slowly top with soda water to create a thick, pillowy foam head.
