Ingredients
- 2 oz dry Gin
- 1 oz Raspberry Rhubarb Syrup
- ¾ oz Fresh Lemon Juice
- 1 Egg White (or 1 oz Aquafaba for a vegan foam)
- Soda water to top
Instructions
- Add gin, syrup, lemon, and egg white to a shaker without ice.
- Shake hard for 20 seconds (the "dry shake").
- Add ice and shake again until cold.
- Strain into a tall glass and slowly top with soda water to create a thick, pillowy foam head.
