A Pisco sour by way of Portland. Our Hibiscus Cardamom Syrup gives this classic cocktail depth and color. Don’t be afraid of the egg — it makes for a smooth, silky texture you can’t get any other way.

Ingredients
- 2 oz Pisco
- 1 oz fresh lime juice
- 1½ oz Hibiscus Cardamom Syrup
- 1 egg white
- 3 dashes Scrappy’s Cardamom Bitters
- 3 dashes Scrappy’s Aromatic Bitters
Instructions
- Combine the Pisco, lime juice, Hibiscus Cardamom Syrup, and egg white in a shaker without ice. Dry-shake hard for 15 seconds to build the foam.
- Add ice and shake hard for another 15 seconds.
- Double-strain into a chilled coupe glass.
- Float the bitters over the top in a decorative pattern and serve.
