Oregon Gold Rush
Our take on the classic Gold Rush cocktail using our Meyer Lemon syrup for the both the acid and the sugar. A little extra fresh lemon keeps it bright and the bitters bring the spice and balance.

Ingredients
- 2 oz Bourbon (or a local Pacific NW Rye)
- 1 oz Meyer Lemon Syrup
- ½ oz Fresh Lemon Juice
- 2 dashes Aromatic Bitters
- Sprig of thyme for garnish
Instructions
- Add all ingredients, except thyme sprig, to a shaker and fill with ice.
- Shake until chilled, about 20 seconds.
- Fine strain into a chilled coupe or over a large rock.
- Garnish with a sprig of fresh thyme.
