Painted Hills Paloma
A sophisticated, smoky-floral take on a paloma. The earthiness of mezcal tames the perfume of our Lavender Syrup, making the drink feel rugged rather than delicate. Blanco tequila works too if you want a cleaner finish.

Ingredients
- 1.5 oz mezcal (or blanco tequila)
- ¾ oz Lavender Syrup
- 1 oz fresh grapefruit juice
- ½ oz fresh lime juice
- Soda water, to top
- Coarse salt, for rimming the glass
- Grapefruit wedge or lavender sprig, for garnish
Instructions
- Rim a rocks glass with coarse salt and fill with fresh ice.
- Combine the mezcal, Lavender Syrup, grapefruit juice, and lime juice in a shaker filled with ice.
- Shake briefly, then strain into the prepared glass.
- Top with a splash of soda water, garnish with a grapefruit wedge or lavender sprig, and serve.
